144: Boston Cream Doughnuts

The Boston Cream Pie has been stalking me. For the past few days, it’s been popping all over my dashboard and I find myself salivating every time. I am not superstitious, but damn it, I think this is a sign. I need to make this. Determined, I got off my lazy butt to complete my mission. But somewhere between my bedroom and the kitchen, I got lazy and decided to make Boston Cream Doughnuts instead.  (Don’t follow my example, kids.)

I remember this being my favorite doughnut in Dunkin Doughnuts. I always felt it was more worth it than the other doughnuts because 1.) it didn’t have a hole in the middle and 2.) there’s filling inside. 3.) more frosting on top because of the no hole thing. Don’t look at me like that! I was only allowed Dunkin Doughnuts occasionally and I had to strategize.

129: Kaffir Lime-Coconut Doughnuts

Happy Doughnuts Day! (Okay, please play nice and pretend that I am not a day late.)

I found this recipe in a back issue of Food and Wine serendipitously (is that a word? Tumblr is telling me I misspelled it. But then again, according to Tumblr, ‘Tumblr’ is also misspelled) on National Doughnuts Day.

I was a little nervous trying this. It’s been a long time since I last used my bag of yeast and you know how moody those little buggers are. But the combination of kaffir lime and coconut on a doughnut interested me enough to try. I only raised my dough once. I am impatient, I know. It’s a bad trait, but thankfully it didn’t backfire on me today. My yeast decided to work with me and I got my pretty doughnuts. Yey!

Now, moving on to the glaze. THE GLAZE! I’m telling you, you have to try the glaze. It’s freaking delicious. I could eat ate it right off the mixing bowl. It’s a breath of fresh air (Oop, you got me, I’ve been watching a lot of reality TV lately) and so different from the flavors available commercially.

025: Cinnamon Doughnuts

Doughnuts!

My internet provider’s a total joke. I can’t believe it took me four days of pestering before they took me seriously. I couldn’t go online the whole weekend and I was so bored I felt like tearing my hair out.

Gawd. I need to get out more. I’m much too attached to the internet.

Anyway, on to the good things! The weekend was not a total waste. Thankfully, I had this recipe copied on my wordpad. Doughnuts. Who doesn’t love them?

If you don’t have doughnut cutters, fret not. I used a glass and a bottle cap to make my rings. :)

As an alternative to the glaze, you can sprinkle cinnamon and sugar on your doughnuts. Enjoy!
